Veggie Fajitas with Peach Habanero Salsa


Fajitas are a quick and easy dinner to make and are bursting with flavor! Adding a homemade salsa to it brightens up the flavor profile dramatically! Yes, yes, I know they aren’t wrapped like a fajita, but I like mine like this!

Let’s start with the salsa ingredients.

Wear gloves once you get to the pepper! You do NOT want habanero oils on your skin! Mix everything together and let marinate for a couple hours.

Now for the fajitas. Mmmmmm, so many pretty colors! Start Slicing the veggies and lay them out on a baking sheet. It’s a veggie rainbow! Brush with oil mixture and bake.

Voila! The veggies are done and are delicious.

  • 2 Peaches
  • 1/4 Habanero
  • 1/4 Purple Onion
  • 1 Clove Garlic
  • 1/2 Cup Cilantro
  • 1 Lime Juiced


  • 6 Small GF Tortillas
  • 1 of each Red, Orange & Yellow Bell Pepper
  • 1 Purple Onion
  • 2 Cups Mushrooms
  • 1/4 Cup Extra Virgin Olive Oil
  • 2 Cloves Garlic
  • 1 tsp Ground Chili Powder
  • 1/4 Cup Cilantro
  • 1/2 Lime juiced



  1. Peel and pit the peaches. Cut into 1/2 inch chunks.
  2. With gloves on, cut up 1/4 of a habanero into very tiny pieces.
  3. Chop the cilantro, onion and garlic.
  4. Mix the peaches, habanero, first amount of onion, garlic, cilantro and lime juice together and pour the lime juice over it. It's preferable to let marinate for at least 2 hours to let all the flavors mix together, but not necessary.


  1. Now for the Fajitas. Preheat the oven to 400F/200C.
  2. Slice the mushrooms, peppers and onions.
  3. Lay them out on a baking sheet.
  4. Mix together the second amounts of oil, garlic, chili powder, lime juice and cilantro. Brush it over the vegetables.
  5. Bake for approximately 20 minutes, or until desired tenderness.
