Warm Zucchini Salad


With cooler weather here, I love having something warm to eat that is also a little spicy. It’s very easy to prepare and takes hardly and time to cook. With eating healthier, I find that food that’s full of flavor satisfies my palate and makes it so that I don’t want to snack later in the evenings. This warm salad has a great play on al dente zucchini noodles, the crunch from the raw veggies and the tang of the Sofrito.

After spiralizing the zucchini, sprinkle with a little bit of salt on them and let it rest for 15 minutes to draw some of the liquid in them. Lightly saute, then add Sofrito and nutritional yeast. Warm Zucchini Salad

  • 1 Tblsp Extra Virgin Olive Oil
  • 2 Cloves of Garlic
  • 1 Zucchini
  • 1/4 Cup Sofrito recipe linked above
  • 2 - 3 Tblsp Nutritional Yeast
  • 1/2 Avocado
  • 1/4 Yellow Bell Pepper
  • 2 Radishes
  • 1/4 Cup Pea Shoots


  1. Spiralize the zucchini and lightly salt it. Let it sit for 15 minutes to draw the liquid out of it.
  2. Heat the oil and the garlic in a pan. Add the zucchini and cook for 3 minutes. Add the Sofrito and the nutritional yeast. Cook for another 2 minutes.
  3. Top with the rest of the vegetables and add more Sofrito if desired.
