Fig Raspberry Coconut Chia Pudding

Ingredients

Fig Raspberry

  • 2 Figs
  • 1 Cup Raspberries
  • 1 Tblsp Chia Seeds
  • 2 Tblsp Water

Pudding

  • 1 1/4 Cups Coconut Milk
  • 1/2 Cup Chia Seeds
  • 2 Tblsp Coconut Flakes
  • 1 Tblsp Maple Syrup
  • 1 tsp Pure Coconut Extract

Instructions

  1. Combine all the ingredients for the coconut pudding and mix thoroughly. Refrigerate 1 hour, mixing frequently.
  2. Blend raspberries and the middle of the figs together. Strain if desired. Add water and chia seeds and let it set for 10 minutes.
  3. Layer the two puddings in a glass and refrigerate for another hour or overnight.
