Mint Chocolates (Vegan)

Ingredients

Filling

  • 1 Cup Smooth Almond Butter
  • 1 Cup Coconut Oil
  • 1/2 Cup Maple Syrup
  • 1 tsp Pure Peppermint Oil

Chocolate

  • 3 Tblsp Coconut Oil (melted)
  • 3 Tblsp Cocoa Powder
  • 3 Tblsp Maple Syrup
  • 1 tsp Vanilla

Instructions

Filling

  1. Combine everything in a saucepan, and mix thoroughly.

  2. Whisk until it is smooth over medium heat for 5 minutes. Pour into a container & put into the freezer until cooled. **You could also pour it into a chocolate mold to set** It will take around 90 minutes to cool.

  3. Once cooled, roll into 1 inch balls and return to the fridge.

Chocolate

  1. Melt the coconut oil in a bowl. Add the rest of the ingredients, and whisk until smooth.

  2. Quickly coat the filling in the cocolate and return to the fridge. Keep stored in the refrigerator for up to 2 weeks.
