Minty and satisfying
Combine everything in a saucepan, and mix thoroughly.
Whisk until it is smooth over medium heat for 5 minutes. Pour into a container & put into the freezer until cooled. **You could also pour it into a chocolate mold to set** It will take around 90 minutes to cool.
Once cooled, roll into 1 inch balls and return to the fridge.
Melt the coconut oil in a bowl. Add the rest of the ingredients, and whisk until smooth.
Quickly coat the filling in the cocolate and return to the fridge. Keep stored in the refrigerator for up to 2 weeks.
