Vegan Smashed Potatoes

Ingredients

  • 500 grams Mini Potatoes
  • 1 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Chopped Parsley
  • Salt & Pepper
  • 60 grams Nuts For Cheese Red Rind (sliced)

Instructions

  1. Preheat oven to 375F/190C.

  2. Boil the potatoes until they are fork tender and drain.

  3. Place the potatoes on a parchment lined baking sheet and smash them. Brush with oil and sprinkle with salt & pepper. Bake for 10 minutes.

  4. Remove from oven and place slices of cheese on the potatoes and bake for another 5 minutes.
