Quinoa Salad with Avocado Cilantro Dressing

Ingredients

  • 1/2 Cup Quinoa
  • 1 Cup Vegetable Stock
  • 1 of each Red & Orange Bell Peppers
  • 1/2 Cup Corn
  • 4 Cups Romaine Lettuce

Dressing

  • 1 Cup Cilantro
  • 1/4 - 1/3 Cup Extra Virgin Olive Oil
  • 1 Avocado
  • 1 Garlic
  • 1 - 2 Limes
  • 1/4 tsp Chili Powder
  • Pinch of Salt

Instructions

  1. Combine the vegetable stock and the quinoa in a saucepan. Bring to a boil then reduce heat and simmer until the stock is gone; around 7 - 10 minutes. Remove from heat and cool.
  2. Chop up the veggies and put in a bowl. Add the quinoa and lettuce.
  3. Blend all the dressing ingredients until smooth. Adjust the lime juice according to your taste Pour over salad and serve.
