Lemon Blueberry Overnight Oats

Ingredients

  • 1 Cup Rolled Oats
  • Barely a pinch of┬áSalt
  • 3/4 Cup Blueberries
  • 1/2 - 3/4 Cup Coconut Milk
  • 1/2 tsp Vanilla
  • 1 - 2 Tblsp Maple Syrup
  • A few drops of Pure Lemon Oil

Instructions

  1. In one bowl combine the rolled oats and salt. Stir well.
  2. In another bowl combine the milk, vailla, maple syrup and lemon oil. Make sure you use the lemon oil sparingly as it is quite strong. If you don't have lemon oil, you can use 1 - 2 tablespoons of grated lemon peel.
  3. Pour the wet ingredients into the dry. Scoop a small amount into a jar and layer with the blueberries. Repeat until the jar is full.
  4. Refrigerate at least 6 hours but will be good up to a week. Top with homemade granola.
