Watermelon Sandwich with Mint Pesto

  • 2/3 Cup Fresh Mint
  • 1/4 Cup Fresh Basil
  • 1/2 Cup Cashews
  • 1 Lime juiced
  • 2 Tblsp Extra Virgin Olive Oil
  • 1 - 2 Tblsp Nutritional Yeast
  • 3 Slices of Watermelon cut into 4" squares


  1. Blend all the ingredients except the watermelon. Add more oil if needed.
  2. Cut the watermelon into three 4 inch squares. Layer the pesto in between the watermelon slices. Finish off with a squeeze of lime.

Recipe Notes

*NOTE: For a party, you could cut the watermelon into 1 inch squares and serve it with a fancy pick in it.
