Zucchini Salad with Blood Orange Dressing


Zucchini salad is one of my favorite salads because it is so light and refreshing, but jammed packed full of flavor! They are also extremely simple to make, which I love. They are not just a summer salad, I eat them all year around. This salad combination came about due to the fact that I had a blood orange that was almost overripe, and it turned out to be a great dressing for this salad.

I started by spiralizing my zucchini. I decided to use a different blade just to make it look more visually appealing. Once you’re done, it is very important to salt it and let it sit for 10 minutes to let the excess liquid pull out of the zucchini.

You can add whatever veggies that you like, but these are the ones I love paired with zucchini. The assortment of colors is so pretty!

The dressing tastes so delicious, and pairs wonderfully with the salad. If you like your dressing on the salty side, you can add more salt. Drizzle the dressing over the salad and let it sit for at least 5 minutes and then enjoy.

  • 1 Zucchini
  • 6 Grape Tomatoes
  • 1 Carrot juilienned
  • 1/2 Cup Purple Cabbage shredded
  • 1/4 Yellow Bell Pepper


  • 1 Blood Orange juiced
  • 1 Lime juiced
  • 1 Tblsp Apple Cider Vinegar
  • 1 Clove Garlic crushed
  • 2 Tblsp Fresh Basil chopped
  • 2 Tblsp Extra Virgin Olive Oil
  • Pinch of Salt


  1. Spiraize the zucchini and sprinkle salt. Let sit for 10 minutes.

  2. Prepare the vegetables and toss with the zucchini.

  3. For the dressing, mix everything together and pour desired amount over salad.
